
Classic French Madeleine

- - 2 large eggs
- - ½ cup 100g granulated sugar
- - 1 tsp vanilla extract
- - 1 tsp lemon zest optional, for a citrus twist
- - 1 cup 125g all-purpose flour
- - 1 tsp baking powder
- - ¼ tsp salt
- - ½ cup 115g unsalted butter, melted and slightly cooled
- - 2 tbsp milk
Instructions
- Prepare the Batter:**
- - In a mixing bowl, whisk together **eggs** and **sugar** until light and fluffy (~3-5 minutes).
- - Stir in **vanilla extract** and **lemon zest** (if using).
- **Mix Dry Ingredients:**
- - In a separate bowl, whisk **flour, baking powder, and salt** together.
- **Combine:**
- - Gently fold the **dry ingredients** into the egg mixture.
- - Add **melted butter** and **milk**, folding until just combined.
- - Cover and **chill the batter** in the refrigerator for at least **1 hour** (this helps create the classic "hump").
- **Preheat & Prepare Pan:**
- - Preheat oven to **375°F (190°C)**.
- - Grease a **madeleine mold** with butter and lightly dust with flour.
- **Bake:**
- - Spoon about **1 tbsp of batter** into each mold, filling them **¾ full**.
- - Bake for **10-12 minutes** until the edges are golden brown and the center has a small hump.
- **Cool & Serve:**
- - Let cool for **5 minutes**, then remove from the mold.
- - Dust with **powdered sugar** before serving (optional).
