Ingredients
  

  • - 2 large eggs
  • - ½ cup 100g granulated sugar
  • - 1 tsp vanilla extract
  • - 1 tsp lemon zest optional, for a citrus twist
  • - 1 cup 125g all-purpose flour
  • - 1 tsp baking powder
  • - ¼ tsp salt
  • - ½ cup 115g unsalted butter, melted and slightly cooled
  • - 2 tbsp milk

Instructions
 

  • Prepare the Batter:**
  • - In a mixing bowl, whisk together **eggs** and **sugar** until light and fluffy (~3-5 minutes).
  • - Stir in **vanilla extract** and **lemon zest** (if using).
  • **Mix Dry Ingredients:**
  • - In a separate bowl, whisk **flour, baking powder, and salt** together.
  • **Combine:**
  • - Gently fold the **dry ingredients** into the egg mixture.
  • - Add **melted butter** and **milk**, folding until just combined.
  • - Cover and **chill the batter** in the refrigerator for at least **1 hour** (this helps create the classic "hump").
  • **Preheat & Prepare Pan:**
  • - Preheat oven to **375°F (190°C)**.
  • - Grease a **madeleine mold** with butter and lightly dust with flour.
  • **Bake:**
  • - Spoon about **1 tbsp of batter** into each mold, filling them **¾ full**.
  • - Bake for **10-12 minutes** until the edges are golden brown and the center has a small hump.
  • **Cool & Serve:**
  • - Let cool for **5 minutes**, then remove from the mold.
  • - Dust with **powdered sugar** before serving (optional).

Notes

Chef’s Tips
- **Chill the batter** for at least **1 hour** (or overnight) for the perfect rise.
- **Use a nonstick madeleine pan** for the classic shell shape.
